Spelt Flour Flatbread

The soup pot is on the stove. I am tired of processed crackers and I am obsessed with finding interesting ways to put spelt on the table.
These crisp crackers were made with half White Daisy Spelt Flour and half Whole Wheat Daisy Bread Flour because that is what I had on hand that day. You can find the recipe under the Recipes Tab as Middle Eastern Thin Bread…The flatbread should work just as well with all Whole Grain Spelt Flour but you’ll want to keep them tightly sealed in a metal tin since the lower protein flours get stale just a bit sooner. Spelt is an ancient grain that has been revived as part of efforts to manage wheat biodiversity with revival of old varieties instead of breeding new ones. At McGeary Organics, parent of Daisy Flour, we are planting several colonial-era, identity-preserved wheat varieties so that we can harvest them ( in small batches for now) . Eventually we hope to be able to provide named varieties to discriminating bakers as premium reserve flour. Meanwhile, we have milled Spelt Flour for many years now. We offer it as either a plain white spelt flour or the whole grain style that includes the bran and the germ. Spelt has an interesting flavor so it lends itself well to becoming a cracker or a bread that asks for no butter or oil or other condiment. In fact, Spelt should be enjoyed for itself. By nature, Spelt grain is low in protein (compared to bread flour) . The good news: Spelt is therefore easy to grow in our mid-Atlantic climate.
It has a much harder-to-crack casing than does wheat and, for that reason, it has higher production costs that lead to a higher price point than our similar pastry flours. The other good news: Our mill storage is full of truly local Spelt right now; we’ve been able to get enough Pennsylvania or New York Spelt to mill Local Spelt Flour for the next little while.
