¾ cup butter, room temperature
1/3 cup confectioners sugar
2 Tablespoons lime zest
2 Tablespoons orange zest
1 Tablespoon fresh lime juice
1 Tablespoon fresh orange juice
1 Tablespoon pure vanilla extract
2 cups Daisy All - Purpose Flour
2 Tablespooons cornstarch
¼ teaspoon salt
½ cup pecan meal
1) Put butter and confectioners sugar in bowl of electric mixer fitted with whisk attachment and mix on medium speed until pale and fluffy. Add lime zest, lime juice and vanilla. Mix again.
2) Mix together flour, cornstarch and salt in another bowl. Add flour mix to butter mixture and mix on low until combined.
3) Divide dough in half . Roll dough into ¾ “ diameter logs and wrap in parchment paper. Chill until cold and firm. Roll logs in pecan meal to coat outside of entire log.
4) Preheat oven to 350° F. Cut logs into ¼ “ thick slices and place slices on parchment lined baking sheets. Bake until barely golden. About 12 minutes.
