Quick Corn Meal Pizza
Here’s a mother-daughters recipe for a fast and easy and delicious pizza pie. Elizabeth, Sofia and Maddalena Masciale-Walmer put this pizza together in about an hour. The crust is baked first, then the toppings are added and the pie is baked a second time to melt the cheese and heat the sauce. All in all, this cooking session lasted an hour and a half and we were cleaned up, fed, and out the door in two –hours tops!
Corn Meal Pizza Crust
1 and 1/3 cups milk
1/2 cup vegetable oil
2 and 1/2 cups Daisy Flour*
*Use Daisy All-Purpose Flour or mix it to your own taste with a combination of Daisy Pastry Flour and Daisy Bread Flour.
1 and 1/2 cups corn meal
2 teaspoons baking powder
1 teaspoon salt

Add milk and oil to the dry ingredients.
Stir until dough ball forms.

Let stand 2-3 minutes on greased pizza pan
Shape with the back of a spoon or use your fingers.

You can use a rolling pin but if dough sticks to the pin you need to use more flour. Too much flour gives your dough a tough texture and you can’t get it really thin so it will be really crispy. But maybe you don’t care about crispy because using a rolling pin is a lot of fun.
| Take it out
Bake at 425 degrees for 15-20 minutes, depending on thickness.
(We like it really thin and crispy. The thinner the crust the faster it gets brown and maybe too crispy).

then return to the 425° oven for 15-20 additional minutes.
