Spelt Whole-Wheat Pizza Pie
1 packet active dry yeast (about 2 tsp) 1 tsp salt 1 tsp sugar 1/4 cup olive oil 1 cup warm water 1 cup Daisy Whole Wheat Pastry Flour 2-1/2 cup Daisy Spelt Flour (more or less) Mix together yeast, salt, and sugar then add oil and water
Add the whole wheat flour and mix with a wooden spoon
Add the spelt flour 1/2 cup at a time, beating with the wooden spoon only until the dough starts to come together
Turn out onto a floured surface and gently knead in enough flour to achieve desired consistency (Not too sticky, and with some strength when tugged on)
Coat a large mixing bowl with oil. Form dough into a ball and put into the bowl, turning so all sides are coated with oil
Cover with an overturned plate and allow the dough to rise for about an hour, this hour gives you the perfect amount of time to make a batch of pizza sauce and toppings*
Preheat the oven to 450oF
Prepare a baking sheet with cooking spray or oil and sprinkle with cornmeal
Punch down the dough and stretch or roll it into your pizza shape
Top with toppings and place in the oven for 10 minutes
Keep an eye on the pizza to make sure that it isn’t burning
Experiment to find the best temperature/time for your combination of oven, baking sheet, or pizza stone *Pizza Sauce 2 tsp olive oil 2 cloves garlic, minced 1/2 tsp thyme 1 tsp salt fresh ground pepper 4 plum tomatoes, chopped 2 Tbsp tomato paste In a saucepan over medium high heat sauté garlic in oil, being careful not to burn it
Add spices, then tomatoes and paste
Turn up heat until tomatoes release some liquid, and then simmer them for 10 minutes
Remove from heat and allow to cool before putting into blender
Blend until smooth -- or chunky if you prefer
